Blackberry Chia Seed Protein Pudding

Packed with protein and super-fast to prepare ahead, this protein chia pudding makes an easy protein breakfast, snack or perfect late night treat. The best part is that everything comes together in a mason jar which is the simplest meal prep situation ever, with zero cooking required.


Ingredients:


2 tbsp: Chia Seeds (3.3 grams protein)

4 oz: Unsweetened Almond Milk (or dairy free milk of choice)

2 tbsp: Vanilla Protein Powder of your choice (8-12 grams protein, depends on brand)

Place these three ingredients into your mason jar and shake til combined.

Refrigerate for 20-30 mins if using right away--overnight is preferred.

The chia seeds combined with the liquid will thicken up perfectly overnight.


1/4 cup: Blackberries with a drizzle of maple syrup. Mash together with a fork.

(You can use any berry of choice if you do not prefer blackberries)


Place the mashed blackberry mixture into the jar of thickened chia seeds.

Mix well, until combined. Your chia mixture will turn a lovely shade of purple.


1/4 cup: Whole Blackberries. Top your Chia Seed Pudding with the whole blackberries and enjoy! If taking on the road, place the cover on and enjoy later.
