Another great option for prepping lunch is grilled lemon garlic chicken with brown rice, herbs, black beans and spinach. We recommend slicing the chicken right before you warm it up... toss this glass dish in the microwave for 2-3 minutes and once warmed drizzle with a little extra virgin olive oil and toss together. The spinach wilts and combines with the rice and beans for a bowl of comfort. Season with salt and pepper as you prefer....it also tastes great with fresh lemon squeezed over it too!
